By the way I agree that consuming broccolli, leafy vegetables, cucumbers etc. is o.k. on a low carb diet since there is very little net carb in those foods due to its high fiber content..
The initial induction period of Atkins only allows 20 net grams of carbs per day. After 3 days the glycogen (from carbs) stored in the muscle and liver are depleted and the body is force to convert the stored fat into energy. This is the best way for people who are have more than 30% body fat (obese). to shed the pounds. If you keep feeding the body sufficient amount of carbs regardless of its quality, the body will use those carbs for energy and will not go to the fat stores. .

Wow Amy, thanks for the share. That’s really great news. A lot of people are amazed to find that glycemic index eating is the only clinically proven method for sustained weight loss. It’s great to see walking proof too!
Thanks for the comment: The Glycemic Index has been proven through double-blind, In-Vivo studies. It shows conclusively that many fruits and vegetables have medium to low glycemic indexes. Again it depends on the preparation and sometimes combinations during ingestion. If you have pointers to any in-vivo studies that indicate otherwise, I’d be happy to see them. I can only keep up with so many journals so I’m always open to new studies.
This information is wrong. I am not saying fruits and veggies are bad for you but if you think simple carbohydrates that are found in fruits and veggies do not cause insulin spikes you must be dreaming. The reason whole wheat bread is reccomended over white bread is because the carbs are much more complex and it takes your body a lot longer to break them down therefore the insulin is not hyped up right away. carbs found in fruit will be broken down very quickly and cause a huge insulin spike.

Thanks for the comment. This is an issue that concerns me a lot and it really pains me to see someone say yes to the extra bacon on their burger but no to the salad because they’re avoiding carbs! I think Atkins was even discouraged, as evidenced from passages towards the end of his books, that people weren’t getting the point. Thanks again!
It’s nice to hear another voice who understands what low carb is really all about. It’s not about eliminating all carbs. It is about eliminating the insulin spike and getting eating under control. Anyone who cuts out Broccoli and Cauliflower and green low-starch vegetables simply isn’t doing any notable low carb diets as prescribed.
