@bowulf It turned out soooo good – I used a Poblano pepper and 1# sage sausage and 1# hot sausage, Publix store brand. A keeper! And I have half in the freezer for another day.

@gattamom The portions in the video are as described above. The Cauliflower might have been smaller one or I used 3/4 of a large. (I also only used the florets of the cauliflower not the stems.) I do use more vegetables and sausage in my recipe than Linda’s used in hers just because I hate using part of an onion. Communicating to someone else half an onion or medium onion is easier than 2 TBS onion.

I am so afraid he is going to burn himself! Try a wooden spatula! Thanks, great recipe

One more thing, your proportions are different than the ones on Lindas site – it looks like you have doubled everything but the cream cheese and shredded cheese. Are your proportions the ones you recommend?

(I assume you are cooking half a batch in the video because there is no way that is a whole head of cauliflower inthe pictures).

@gattamom I’d really like to try some of my Hatch chile peppers in this recipe now. Aromatics, cauliflower, Sausage, Chicken, and cheese — how could you go wrong with whatever additional flavors you tossed at it?

  8. bowulf says:

@gattamom Oops, I have fixed the omission. Thanks for catching it.

  9. gattamom says:

I just noticed that you left the cauliflower out of the recipe at the end of the video.

@bowulf , How about using this mix to make enchiladas? Huh, huh? Sounds deadly to me.

ps – I decided to use Poblano pepper instead of green pepper, will report back tomorrow.

@gattamom As much as I love chicken enchiladas, this recipe trounces them. I heartily support your decision to make this one instead. Now I am going to have to buy a rotisserie chicken just to make it.

  13. gattamom says:

And to think I was going to make enchiladas with that leftover rotisserie chicken tonight. NOT!

@marnao122 Thanks so much for your reply. It is very helpful and appreciated. I always look forward to watching your recipe videos. They are awesome and all the recipes I have tried just from your videos have turned out awesome. Even my son likes them and he is quite picky.

  16. bowulf says:

@marnao122 The recipe makes 10 servings, so the easy answer is one-tenth the final dish. If you are looking for a volume measurement, it’s roughly one and half cups.

This recipe looks awesome! What would be a serving size on this particular recipe in accordance with the nutrition info that you have up?

@msv161 Youtube is best place to find my recipes — I have a specific recipe playlist that contains all my recipes.

I do however get many of my recipes from Linda’s Low Carb Recipe website and Jennifer Eloff’s cookbooks and blog as well.
