Atkins Diet Recipes: Buffalo Wings

These wings are some of the best reasons to go on the Atkins Diet. They are completely legal for all phases of the diet and absolutely delicious. The Diet Coke is a unique ingredient, but it really does the trick. I think by adding the wings to the simmering sauce, the collagen helps thicken the sauce as well. Ingredients 3 pounds chicken wings, separated at joints, tips discarded 1 cup Louisiana-style hot sauce (Franks Hot Sauce recommended) www.amazon.com 1 can Diet Coke with Splenda 1 tsp cayenne pepper, or to taste 1 tsp ground black pepper, or to taste 1/2 tsp Thyme 1/2 tsp Garlic Powder 1 tablespoon soy sauce 1/2 TBS Dried Chopped Onions Instructions: * Cut the wings into pieces. * Mix other ingredients into large pot and start simmering. * Add wings to pot to give flavor * Heat Oil to 350-375F degrees * Add wings to fryer and cook until done (12-14 minutes) * Add wings back to Buffalo sauce and coat thoroughly



@twinma0454 I prefer peanut oil but will also use corn oil (less expensive).
What oil do you use in your fryer?

My husband is sooo pleased that i’ve chosen this diet. But not because he wants me to loose weight – he just can’t wait to chow down with me.

@rosuabsc I hear you — it used to be wings were cheap – $1.50 a pound, lately they have been over $2-2.50 a pound. I might have to start buying whole chickens just to get the wings off. Too many low carbers discovering the greatness of buffalo wings…

@lespaul515077 Yes, flex the wing joint further than it normally would go to expose the joint and make the cut easier to do.

Remember I said specifically “Diet Coke with Splenda” because I absolutely agree aspartame-sweetened version should not be cooked. (Truth be told, I don’t think it should be drank either.
) Sucralose and Ace K in the DC w Splenda is heat stable and should be fine.

Thanks I really appreciate it. I’m not sure that aspartame (in Diet Coke) should be cooked… so I try to avoid it. But I am a freak about ribs. I really appreciate your suggestions! Congratulations on your amazing weight loss and continued support of the Atkins community.
I am a big dry rub guy… I take most original dry rub recipes dump the brown sugar, double or triple paprika content, and add tbs or so of granulated Splenda. Throw some liquid smoke on the ribs as it cooks, and you are golden.
I’m an avid Atkins girl… and I love wings. I soak wings in Hot sauce (o carbs) for a day or so… then I grill them. They are not too hot… and the grill crisps the skin. They are really delicious and zero carb….. but I’d love a good rib recipe for low carb that doesnt use diet cola….
I bought some Diet Rite today and discovered the same thing (overly sweet). Diet RC Cola is much less sweet, so you might try to find that in the soda aisle. Many store brands and Jones Soda are also sweetened with Splenda as well. An alternative would be to still use the Diet Rite, but use only half (8 oz) the original amount and increase the Frank’s Sauce amount as well.
i am a big fan of your recipes, bowulf! i decided to try this recipe today. i could not find diet coke with splenda anywhere so i used diet rite instead. the artificial sweetener taste in the wings was overpowering. what would you suggest i use instead of diet coke with splenda? thanks!
So this meens i can have as many as i want during Induction. Now i usually make the second recipe cause its easier, so is that recipe and eat till satisfied aswell
These are an “eat liberally” or until satiated thing.
How many of these can you have durring Induction?
You just can’t beat Wings like these. I found a good recipe for Garlic Parmesan wings, and all is good in the world.

You can probably do a beer version of this too! Use a low carb beer instead of the diet coke..whaddaya think?
